Ingredients for 4 Servings
200 g dried kakis [Order No: 191]
500 g water
20 g (2 tbsp) lemon juice
¼ tsp vanilla powder

With dried kakis / persimmons, you can create an exceptionally delicious yet simple raw dessert. This recipe requires no gelling agents and no sugar at all!
Ingredients for 4 Servings
200 g dried kakis [Order No: 191]
500 g water
20 g (2 tbsp) lemon juice
¼ tsp vanilla powder
Preparation
Ideally, place all the ingredients together in a tall container and let them soak for about 30 minutes to 1 hour.
Make sure the persimmons are completely covered with water.
The lemon juice helps prevent the persimmons from turning brown.
After soaking, transfer the persimmon mixture to a blender, for example a Vitamix. You can also purée it with an immersion blender, though this takes a bit more patience.
The persimmon mixture needs to become very thick through blending. With a Vitamix, this can be achieved on medium speed within 3 to 4 minutes. With very powerful blenders, take care that the mixture does not thicken into a pudding already during blending.
Spoon the persimmon mixture into prepared bowls or pudding molds and refrigerate for 1 to 2 hours.
This pudding is also excellent as a sugar-free spread.
