Treat yourself with Vegusto: Recipe No. 297

Vegan Chestnut and Potato Gnocchi

This fall menu treats you to nutty gnocchi, aromatic date tomatoes, and a creamy, tangy "No Muh" sauce.

Preparation

Sauce: In a small saucepan, simmer the coarsely grated No-Moo, Piquant, No Moo, Pizza Sauce, and water over medium heat for 2 bis 3 minutes. Stir constantly with a whisk until the sauce is evenly creamy. Season the sauce with salt and pepper to taste and keep warm.

Topping: Sauté the halved tomatoes with the oil in a skillet for 10 minutes. Season with salt and pepper to taste and keep warm.

Gnocchi: In a bowl, mix the flour with the salt. Peel and mash the potatoes, then add them to the flour along with the chestnuts. Use a potato masher to work the mixture into a smooth dough.
Use a teaspoon to scoop out small pieces of the dough and shape them into oval gnocchi with your hands. Bring 2 liters of salted water to a boil. Add the gnocchi to the gently simmering water and cook for 1–2 minutes over medium heat.

As soon as the gnocchi rise to the surface, remove them with a slotted spoon, drain, and divide among plates. Pour the sauce and tomatoes over the gnocchi, garnish with parsley, and serve.
