Colourful Ribbon Noodles with Veggie Mince

This colourful, quick and tasty dish is just the right thing for a joyous celebration. Guaranteed to satisfy hungry children and adults alike.

Preparation

Cook ribbon noodles in a pot of boiling salted water until al dente. Discard water and set aside.
In the mean cut carrots, onions, leek and tomatoes into small pieces.
Add olive oil and chopped vegetables to the pot, then sauté together with peas, garlic, rock salt over moderately high heat, covered, until softened about 5-10 minutes.
Add water, Veggie Mince, soya sauce and nutritional yeast flakes. Sauté for 5 minutes while stirring occasionally.
Season with fresh ground pepper and rock salt. Before serving mix the Veggie Mince with the noodles.

Goes well with a mixed salad.
Tip: Chopped mixed vegetables are also available in the frozen food section.
